In the Kitchen with Joe: ‘Kiko’s Cantina’
GRAND ISLAND, Neb. (Nebraska) – If you watch the chefs cook at Kiko’s Cantina on Grand Island, you’d think the restaurant has been open for quite some time.
However, the restaurant has only been open for a few weeks.
Owned by Francisco and Vanessa Garcia, Kiko’s has already made a name for itself by serving authentic Mexican cuisine, which draws recipes from Garcia’s hometown of Jalisco, Mexico, as well as other regions of the country.
“Many of our recipes come from our hometown, but we have a lot of different dishes from different regions,” Francisco said. “From Mexico City, Oaxaca and Michoacán, we have blended many different flavors together.”
Another big selling point of the restaurant is the beautiful atmosphere, with murals and decorative chandeliers hanging above customers’ heads.

“We brought most of our furniture and lighting from Mexico,” Vanessa explained. “We hired an artist from Omaha to come and paint the murals.
“I think people like the way it all ties into the bright colors, and it really makes the place pop,” Francisco continued.
With good food and a great atmosphere, Kiko’s has been attracting customers left and right.
“We saw many customers from our other plants come in and take a look. We saw many new faces. I think it was great overall,” Francisco said.
